Medallions of Pork and Shrimp
Pour peanut oil into a hot pan. Place the shrimp in the
pan. Sauté for 1 minute on each side, then remove from
the pan and set aside.
2 ounces peanut oil
3 (U-15) shrimp
2 3-ounce medallions of pork
Powder both sides of the pork medallions with flour.
Sauté for 1½ minutes in saucepan. Remove the medal-
lions from the pan, set aside, and drain and discard
the oil.
Flour, as needed
2 ounces shallots
2 ounces brandy
Salt and pepper, to taste
5 ounces heavy cream
Place the shrimp and pork together in the same pan.
Add the shallots to pan. Remove the pan from the heat;
add the brandy and slowly put the pan back to heat.
Leave on the stove for 30 seconds.
3 ounces light brown sugar
Add a pinch of salt and pepper, the heavy cream, and
brown sugar. Reduce for 3 minutes. Serve and enjoy!
