Banana Squash Soup
Sauté the onions until caramelized. Pour in the sherry
wine and cook until reduced.
10 whole yellow onions, sliced
16 ounces sherry wine
Add the chicken broth and banana squash. Boil for 45
minutes to 1 hour.
1½ gallons of chicken broth
10 pounds banana squash, peeled
4 ounces chicken base
Add the chicken base, brown sugar, and heavy cream.
Cook for 20 minutes. Blend together and use corn-
starch to thicken. Serve and enjoy!
1 pound light brown sugar
1 gallon heavy cream
Cornstarch as needed
