Pickled Red Onions
Peel and julienne the onions. Place in a medium size
pot and add the rest of the ingredients. Bring up to a
boil and let simmer 5 minutes.
3 medium red onions
2 cups red wine vinegar
1 teaspoon red chili flakes
Transfer onion and pickling liquid to an ice bath to
cool. Onions will keep in the refrigerator covered for
2 months.
2 tablespoons sugar
