Fava Bean Purée
Cook shelled fava beans in boiling salted water until
tender. Shock in an ice water bath. Peel the beans and
put aside.
1 cup fresh fava beans, shelled
(about 2 lbs.)
1 baguette loaf
Slice bread very thin, approximately ¹/ 8 inch thick.
Brush or spray lightly with olive oil and season lightly
with salt and pepper. Arrange on sheet pan and toast in
350-degree oven until golden brown.
Olive oil for toasting crostini
Salt and pepper to taste
1 clove garlic
1 tablespoon lemon thyme
¹/ ³ cup extra virgin olive oil
In food processor, add fava beans, garlic, and lemon
thyme and puree while adding the olive oil. Season to
taste. Spread fava bean puree on croutons and serve.
