Poulet de Broccoli
Parboil or barely cook the broccoli spears. Slash the
stems for even cooking. Put in a buttered casserole or
ramekin. Top with chicken breasts.
8 spears fresh broccoli
8 raw, skinned, boned chicken
breasts
Mix the cream of chicken soup, mayonnaise, lemon
juice, and curry powder. Pour over chicken breasts.
Cover this sauce with Cheddar cheese. Top with bread
cubes and Parmesan cheese. Bake for 30 minutes at 350
degrees.

1 cup mayonnaise
1 teaspoon lemon juice
½ teaspoon curry powder
1½ cups sharp Cheddar cheese
1½ cups soft bread cubes
