Chestnut Cream
Place the heavy cream and chestnuts in a small sauce-
pan and simmer over medium heat for 5 minutes.
Transfer to the container of a blender; cover and puree
until smooth, adding a little more cream if needed.
¼ cup heavy cream
¼ cup steamed chestnuts,
chopped
½ cup crème fraiche
Place cooled cream mixture and crème fraiche in a
stand mixer with the whisk attachment and whip to soft
peaks. Add salt, white pepper, and nutmeg to taste.
