Macadamia Nut Encrusted Brie
with Spicy Chili Glaze
BRIE PREPARATION
You will need 3 shallow bowls. In bowl 1, place flour. In
bowl 2, place egg mixed with water and slightly beaten.
In bowl 3, mix macadamia nuts and breadcrumbs.
BRIE
½ cup all-purpose flour
2 whole eggs
1 ounce water
1 ounce macadamia nuts, toasted
and ground to powder
Dip Brie into flour and coat well. Dip into egg mixture,
again coating well. Next, dip in macadamia-bread-
crumb mixture. Set aside and refrigerate to chill.
1 ounce breadcrumbs
1 small, 2-ounce wheel Brie
(or cut Brie into sections)
Crisco shortening
FINAL PREPARATION
To make sweet chile glaze, blend all ingredients in a
blender until smooth.
CHILI GLAZE
½ cup prepared sweetened
chili paste (recommend
to use Sambal chili paste,
sweetened with honey
in a 1:1 ratio)
Heat the Crisco in a deep skillet. When very hot (test
with water droplet), place Brie in oil using a slotted
spoon. Quickly fry on all sides until soft and nuts are
golden. Take out of oil and drain on paper towels.
1 cup orange marmalade
1 ounce orange juice
You can also bake in the oven. To do so, spray the Brie,
as well as the pan, with cooking spray, then cook in a
400-degree oven for 10 minutes or until Brie is soft.
Serve sweet chili glaze on the side or drizzled on the
Brie.
