Nantucket Bay Scallops
with Winter Citrus
On stovetop, reduce orange juice to ΒΌ cup. Once re-
duced, whisk in olive oil to taste.
1 cup orange juice
Olive oil
1 pound Nantucket Bay scallops
Season scallops with salt and white pepper. Sear in hot
pan until lightly brown or as desired.

6 tangerines
Segment the tangerines. Place segments on plate with
scallops on top. Drizzle plate with orange oil.
