TO ASSEMBLE BREAD PUDDING
Place the toasted bread into the ramekins. About 5-6
pieces would be good. Fill with custard, cover with
plastic wrap and let sit for about 30 minutes or until
the bread has softened. You may need to top off the
custard before baking if the bread has absorbed some
of the custard. Cover with foil and bake in a water bath
for about 40 minutes or until custard is set. Remove the
foil and continue to bake for another 10 minutes until
the top is a dark rich color. Remove from the water
bath and let cool. May be served at room temperature
or warm.
