Allan Paivio: Dual Coding Theory
Paivio's dual coding theory laid the groundwork for a huge number
of later theories that would interrogate the difference between audi-
tory and visual processing in human cognition. For this reason, it
should be considered foundational reading for anybody interested in
how humans learn from multimedia presentations like films, games,
or animations. It can be very heavy at times, but if you are particularly
interested in differences in audio and video processing, I'd check it out.

Bruce Mann: Attentional Control Theory
Attentional control theory is a less well-known but still influential
theory on how the human mind acquires long-term information
through gradual exposure to multimedia via the working memory. It
prescribes particular uses for sound, which is its unique feature. Also
rather psychologically heavy, this one can certainly be used to aug-
ment your understanding of the dual coding and cognitive theories
of learning.
