For hypersensitive individuals, consumption of ki-
wifruits could evoke allergic reactions (Webb and
Lieberman, 2006; Dias et al., 2008). This reaction could
concomitantly occur due to cross-sensitive reactions with
other allergens such as pollen, latex, and so on (Wan and
Lue, 2007). Therefore this fruit has been recognized as
one of the novel food allergens.

Effect of processing on nutrients
Kiwifruits are an important source of nutrients (Table 25.7),
including vitamins (A, C, thiamin, niacin), minerals, di-
etary fibers, and significant amounts of phytochemicals
that position the kiwifruits among supernutrient foods.
Common processing of kiwifruit involving wounding the
fruit through peeling, slicing, and dicing can accelerate the
