Alain Senderens believes passionately that fine food
merits fine wine: he looks for hints of dried fruit, herbs
or toasted nuts in wine and then marries them with the
real thing. Thus, each dish here is accompanied by a
wine that harmonizes perfectly with it; a late-harvest
Gewurztraminer with its rose-lychee bouquet teamed
with roasted foie gras in an exotic fruit vinaigrette is a
match made in heaven. The food is the perfect
partner for one of the most lavish dining rooms in
Paris - boasting curved Art-Nouveau wood partitions
with glass-encased butterflies and rich, merlot-
coloured banquettes. Senderens bought the
restaurant in 1985, perhaps as a nostalgic nod to the
time he spent here as a young saucier for the
renowned chef Soustelle. Twenty years later, the
apprentice is now the acclaimed master. Expensive
