While you need a fully mature pepper as a source of seeds, do not save seeds from
discolored, diseased or insect-damaged peppers. These are likely to be a source of disease
or have rotted seeds. Peppers that are misshapen are a great source of seed, with the pep-
pers produced from such seed unaffected with respect to shape.
If saving seeds from a number of different varieties, keep the seeds from each one
separate. While you may have the seeds on opposite sides of the kitchen towel to start off
with, it is incredibly easy to get things knocked and mixed together. While a little extra
work, do everything separately and label at each stage.
