Capsacin can burn the skins and eyes when coming into contact with mucous mem-
branes, and as such care must be taken when handling hot chiles. Use disposable latex
gloves when handling or chopping chiles and remove when finished to avoid the risk of
rubbing eyes, noses etc. If you do accidentally get some capsacin or pepper juice/spray in
your eyes, wash immediately with clean cool water. If you are feeling brave and are temp-
ted to eat some hot chiles, but find you can't take the heat remember that capsacin is not
a water soluble molecule. As such, drinking water will not cool down the furnace in your
mouth. Instead try yoghurt, ice-cream or whole milk for some relief.
