Using the radio button's pop-up menu, you can make some items
appear automatically. For example, regardless of which checkboxes
are selected in the Events or Projects list, you can choose to have the
photos from all events from the last month appear on the iPad.

To copy video files located in your library, mark the Include Videos
checkbox.

Click the Sync button. iTunes optimizes the photos and transfers them
to the iPad.
Just What Does Optimizing Do to Photos?
When you sync photos, iTunes resizes them to 1536 pixels on the
shortest side. So, for example, a vertical shot could be something like
1536 pixels wide by 2048 pixels tall, while a horizontal shot would be
2048 by 1536 pixels.
It also converts them to JPEG format, which applies compression to
further reduce the file size. Those are still respectable dimensions,
enabling you to zoom in and retain detail, and it's unlikely you'll see
any noticeable image degradation.
