4 Continuous wet pressing and centrifugal defatting
Various models of this process have been developed,
but the main principle consists of mincing of the raw
material, melting to liberate the fat, wet pressing and
drying/sterilising. Water, fat and fine solids are sepa-
rated by centrifugation. A disadvantage of this process
is that, similar to continuous dry rendering with screw
press defatting, it does not fulfil existing sterilising
regulations in some countries, necessitating a further
sterilisation of the meal.
