Law Regulations of Quality Assessment of Seafood
New regulations clearly establish that producers are directly in charge
of their own foodstuffs, in particular in UE (EC regulation 178/2002).
HACCP is established, as the general proceeding, based on the Codex
Alimentarius Commission principles and in accordance with correct
hygienic practices, must ensure the quality of foodstuffs. However,
there are no fi xed microbiological criteria for seafood, except for bivalve
molluscs. The European Union established regulations in the EU countries
that include different aspects of the management of microbial risks (EC
regulation 2073/2005) as well as strategies for control and prevention of
risks for consumer protection (Reilly, 2006).
