Store and Serve Store tomatoes indoors, on a counter, at room temperature—do not refrigerate, as this
causes the flavor to break down. Large crops can be frozen, canned, or dried. For easy keeping for
winter use, blanch tomatoes in boiling water, slip off the skins, and store in a freezer bag.
Straight-from-the-garden tomatoes are tasty in sandwiches (try them on a BLT), salsa, or sauce for
pasta. Use frozen tomatoes in winter soups and stews.
