Creating a Shortcut Using Address Book
If you're able to locate the address in the Contacts app (open Finder, select
the Applications list, and then double-click Contacts) or a web/text document,
just highlight it as if you're about to copy it for pasting elsewhere, except then
click the highlight and drag it to the desktop. This action will create a Mail
To file. Unfortunately, it isn't possible to drag addresses like this from the
headers of emails within Mail, although you can click and drag any address
mentioned within the body of the email, and this method will work.
Creating a Shortcut Using TextEdit
If you're unable to locate the email address in the Contacts app or online,
just start a blank document in TextEdit (open Finder, select the Applications
list, and then double-click TextEdit), type the address on a new line, and then
highlight it and drag it to the desktop. It should then work in the way
described for other shortcut methods.
Incidentally, both these two techniques also work for web addresses—highlight
and drag any you might find in the Contacts app, or highlight and drag any
you type into TextEdit documents. The dragged text will turn into Safari
bookmark files, which, when double-clicked, will open that page in Safari.
