Salsify seeds
Salsify seeds ready for harvesting
GROWING FOR SEED Salsify is grown for seed as a biennial. Do not save seed from plants that flower
the first year (select instead for bolt resistance). In contrast to scorzonera, salsify becomes hard,
woody, and inedible after flowering. It can be overwintered outdoors in zones 4 and above. Dig roots
in the spring, select, then replant.
HARVEST As with all aster family plants, seeds develop on the flower receptacle and are ripe when
they easily separate from it. Harvest seeds continually from midsummer to early autumn, as ripe seeds
are easily carried away in the wind. Because the pappus “fuzz” and the seed often get wound up in a
clump, harvest in the morning, when the pappus is still compact and can be easily twisted off the seed
(see scorzonera).
