stored in these conditions. In early spring, select for size and shape, and plant these out. Do not harvest
shoots from second-year scorzonera if you wish to harvest seed.
Scorzonera roots and flowers
HARVEST Scorzonera seeds develop, like all aster family plants, on the flower receptacle. When the
seed is ripe, it is easily released (e.g., by the slightest wind) from the receptacle and falls to the ground.
We find it easiest to harvest seed stalks that are almost, but not quite, ripe. To determine the right time
to harvest, watch for the terminal “fluff” to begin to open. Starting in midsummer, harvest continually
for several weeks. Leave seed in the shade for two to three days to dry. By rubbing and carefully
threshing seed in a cloth bag, the seed is separated from the fluff and other plant debris. Nonviable
seed easily bends or snaps. Seeds are dry enough for storage when they are no longer pliant.
