An interesting form of cauliflower that seems to have all but disappeared is winter cauliflower,
which can overwinter outdoors in mild climates or with sufficient snow cover. It is sown in late sum-
mer and produces ripe heads in late spring the following year.
SELECTION CHARACTERISTICS The most important selection happens automatically: selection for
ease of propagation. Yet this trait often contradicts other important selection criteria, such as:
• rapid growth and well-developed leaves
• dense, well-developed, sufficiently large rose
• rose that maintains its ripeness for a long time

• flavor
• leaves that enclose the rose well (the rose will turn yellow when exposed to direct sunlight)
• shape and color of flowers
• plant health and disease resistance
CULTIVATION HISTORY Cauliflower did not come into being until the modern era (after the Middle
Ages). It supposedly originated in Asia Minor. Many varieties come from Italy, where much breeding
work has been done. In Germany, the area around the city of Erfurt is the classic cauliflower seed pro-
duction area, hence the variety 'Erfurter Zwerg' (Erfurt dwarf), introduced in 1902.
