life. The perception is often biased by other parameters than the sensations
received by our senses. The social perception is in general also affected by our
expectations, may be depending on external conditions and impressions experi-
enced earlier. The importance of a social structure, for example the organisation
at work, normally gains importance by focussing on how people in a working or-
ganisation feel and are satisfied compared to not being tangible and being able to
receive social rewards, such as for people being unemployed.

CULINARY ARTS
The social perception in the perspective of a dinner, meal or other types of food
consumption is a social concept relating to the environment and other individuals,
showing that some sort of relationship is established. Food alone does not create
the entirety of a meal. Every meal has a message and communicates a certain
feeling to those who take part in it. Thus, the substantial entirety of a meal is
like art, seeking to inspire and to overshadow any feeling of “commodity” that it
might have, Watz (2008). Of course there are other possible perspectives regarding
how, when and where we consume food, but the meal may well be used as an
experience to increase the sensation, and by that means also increase the quality of
life.
In Edwards (2008), a proposed methodology for a dinner is presented. The
dimension of the dinner consists of a complete, integrated experience composed
of five separate aspects that has to fully integrate in order to achieve the complete
and lasting feeling of an individual sensation. This form of social perception is
comprised in the academic field, of culinary art. The five parts which compose the
full sense of entirety is according to the following proposed methodology:
- the room,
- the meeting,
- the product,
- the management control system, and the
- atmosphere.
The full flavour of the peculiar feeling that encompasses a successful dinner at
a restaurant or in a special family dinner is believed to be a joint feeling, where all
the above aspects of entirety is individually perceived. Also contributing effects
are the joint feeling of well-being between participating individuals, e.g., friends
around the table or in the room. The social and health aspect of a successful activity
is of high emphasis and is a ground layer for fruitful meetings between individuals
common experiences.
The general trends in society tend to create influences that affect the perception
of what we consume in different social situations as shown in Fig. 3.4. The food
industry is continuously adapting to the trends, as well as the social requirements
in a society and tries to correspond to these demands. In the field of food science,
food analysis is an important area to ensure the adaptability of the product to the
