Beetsareusuallyreadyforharvestingin50-70days,thoughtheycanbeharvestedanytime
after the bulb appears. They can be left longer but will become tougher as they grow, and
slightly woody.
The leaves are also delicious and make a good addition to salad dishes.
Apart from storing in a cool dry place; Beets can be pickled, frozen or canned to preserve
them.
