MY FAVOURITE PART OF BORNHOLM...
…is the north coast. It's particularly diverse with its cliffs, beaches and forests. I'm a very
visual person and my dishes are usually inspired by images. Once I have the forms and
shapes in my head, I find the ingredients that not only fit the image, but that work won-
derfully together. I use a lot of herbs from the island's forests and coast. My favourite is
called skovsyre(forest acid). It's zesty, versatile and has a refreshing kick.
FOOD LOVERS ON BORNHOLM SHOULDN'T MISS...
…eating at New Nordic restaurant Kadeau, or at one of Bornholm's famous røgeri
(smokehouses). My favourite is Nordbornholms Røgeri in Allinge. The guys there are
genuinely passionate about the smoking process and the quality is wonderful. Stop for a
local beer at Bryghuset in Svaneke, and taste some amazing hams and sausages at Hal-
legård , a fantastic rural butcher near Østermarie. Then there's my restaurant, Lassens.
BEYOND BORNHOLM, BOOK A TABLE AT...
…Noma in Copenhagen. Not only is the food incredible, but the staff are intuitive and ap-
proachable. Another favourite of mine is Søllerød Kro, just north of Copenhagen. It's not
so much New Nordic as French-Danish fusion. Just like at Noma, you know you're going
to be taken good care of as soon as you walk through the door. They do lunch but go in
the evening to get the full experience.
