Sure, some trendspotters predicted the end of New Nordic cuisine's time in the
global spotlight - but then Noma popped up to reclaim the title of world's number
one restaurant in 2014 (after temporarily losing the crown). New Nordic isn't going
anywhere, and its effects are being warmly felt. Emboldened by the attention and
praise lavished on Danish produce and innovative chefs, food producers are re-
embracing old-school culinary delights. Expect new spins on beloved ryebreads
and pastries, smørrebrød (open sandwiches), smoked fish, and even humble
pork-and-potato dishes, and to eat damn well in unexpected corners of the coun-
try.
