both literally and metaphorically. Award-winning head chef Jeppe Foldager marries mod-
ern French techniques with local produce from small producers, producing arresting dishes
that are vibrant and seductive. Arne Jacobsen cutlery and furniture pay tribute to the
hotel's celebrated designer, while the restaurant's wine cellar is an oenophile's delight.

When burger-lust hits, satiate your urges at Cock's. In a setting best described as American
diner meets Danish Modernist (picture red leather booths against Poul Henningsen lamps),
energetic staff deliver fresh, made-from-scratch burgers that are generous and insanely
good. The meat is Danish and charcoal grilled, and there's a veggie burger for herbivores.
Make sure to order a side of the onion rings.

Fast-food, Flintstones-style is what you get at Palæo, a trendy eat-in/take-away joint ped-
dling so-called 'primal gastronomy'. Dishes are inspired by the palaeolithic diet, which
means carb-light creations like hot dogs with egg-based wrappers (not buns) and risottos
that give rice the flick for celeriac kernels. But if you're thinking mung bean mediocrity,
thing again: behind the menu is Michelin-starred chef Thomas Rode Andersen.
