Maltose
phosphorylase
reversibly
phosphorolyzes
maltose
into
-Glc-1-P) and glucose (Fig. 3.4) [13].
This enzyme has been found in bacterial cells and is considered
to be involved in the metabolism of extracellular maltose. Because
maltose phosphorylase recognizes the
β
-glucose 1-phosphate (
β
α
-anomeric hydroxy group at
the reducing end of maltose, it phosphorolyzes only the disaccharide
unit.
