to suggest that resultant changes in functional properties are either unhelpful or neutral.
Ingredients encapsulated in SLN tend to be more prone to chemical degradation compared
to the same ingredients in liquid oil nanoemulsions. Furthermore, SLN seem to be less
physically stable than liquid oil nanoemulsions (particularly in the
-polymorph). It may be
that the most effective use of SLN will be for ingredients designed to react quickly, perhaps
antioxidants, or to promote adsorption.
