Foods to try
Cuisine inNorthernThailand isquite different fromThai foodintherestofthecountry,with
influences from neighboring countries and the local agriculture. You won't find nearly as
much coconut milk used in cooking and instead you will find more sticky rice. The flavors
tend toward the bitter rather than hot, which could be a relief for those whose taste buds are
still adjusting to the cuisine. There is a wide variety of tastes to experience however, like
"nam phrik", the name for a variety of spicy dips for rice and vegetables.
If you are in the mood for noodles try "khao soi", a curry with shallots, pickled greens and
lime, with roots from Myanmar and likely introduced through Chinese-Muslim traders. In
Chiang Mai you will find many places offering khao soi, each with a different take on the
dish so try a few while you visit to find your favorite one. A good place to start is the largest
(and best known) restaurant Khao Soi Samoe Jai, which makes its own noodles.

pork dishes include "kaeng hang le", a curry with influences from Myanmar and "kaeng
khae", another curry with bitter herbs.
To satisfy your sweet tooth keep an eye out for stands selling "roti" (also spelled "rotee"), a
freshly cooked thin pancake with sweet fillings, like banana drizzled with chocolate sauce.
There are many combinations available so don't stop at one, they make a great snack too.
