The UV-Vis spectrum of lycopene exhibits an absorption maxima (in petroleum
ether) of λ max 444, 470, and 500 nm, in comparison to the absorption maxima of
β- carotene (λ max at 425 and 450 nm). The reason for the observed shift is the increase
in number of unsaturated double bonds in the structure of lycopene compared to
β-carotene, which contributes to a shift due to lengthening of the conjugated system.
Lycopene shifts its absorption from blue to green color in visible light and appears
as a strong red color in contrast to β- carotene.
