A
ACID Measured as the pH level of the grapes, to determine when they are ready to pick.
Total acidity by volume is titratable acidity (TA). This measurement is primarily used by
professional winemakers.
AIR ROOT An outgrowth from the root system that emerges at the base of the trunk.
APEX The tip of a shoot.
ARM Horizontal growth trained from the top of the trunk, also known as the cordon.
AZIMUTH The arc of the sun's path as it crosses the sky.

BARK The dry, rough surface of a trunk or cordon.
BENCH-GRAFTED VINE The process of joining a scion to a rootstock in controlled condi-
tions in a nursery or greenhouse.
BERRY GROWTH The period of time after flowering and through harvest when the fruit
matures.
BERRY SET (ALSO KNOWN AS FRUIT SET) When berries begin to develop, usually 6 to 10 days
after flowering. Some flowers fall off and those remaining develop into berries.
