When should I kill my chickens?
Broilers or fryers are young, tender birds which weigh 2.5 to 4.5 pounds and are
about 7 weeks old. Extra males make good broilers and fryers—females can be pretty small
(and should be saved to expand your egg-laying flock).
Roasters are about 3 to 5 months old and weigh up to 7 pounds. These chickens are a
bit tougher and should be roasted whole.
Older hens that have stopped laying and roosters that have become aggressive can still be
eaten, but these birds are considered stewing chickens. They're best cooked for a long time
at low heat in a stock pot, or can be turned into sausage.
