Layseca, which is run by an Ecuadorian-Belgian couple, is pretty much a Vilcabamba in-
stitution by now. Delicious homemade sweets and pastries are to be expected, as well as
cheap high-protein snacks.

If health foodies pilgrimage to Vilcabamba, Madre Tierra serves as their Mecca. The eco-
resort's restaurant serves only fresh, as-organic-as-possible homemade food in a range of
international dishes, and even serve raw food. Terrace seating and the extensive juice bar
are highlights. Not stoked on salads? Madre Tierra has great pizza too and they don't even
use microwaves to reheat them (they don't have any.)
