informal best describes the atmosphere at this ground-breaking new restaurant where
British chef Paul Day champions Czech farmers by sourcing all his meat and veget-
ables locally. There is no menu - the waiter will explain what dishes are available, de-
pending on market produce. Typical dishes include salmon sashimi, pork belly with
Asian spices, and 12-hour beef rendang.

It's easy to walk past this place on bustling
Národní třída without noticing it, but it's well worth dropping in to sample its accom-
plished menu of local and international dishes in a relaxed atmosphere that hints of
oriental travel - a ship's prow, lots of Asian-style lamps, paintings and textiles.
There's a good breakfast menu too (served till 11am) with French, American and
healthy options.

'The Basement' is a beautiful cellar space, where
modern detailing complements the old red-brick and wooden beams perfectly. Cream
linen chairs, set at gleaming black tables surround a circular glass bar with a colourful
aquarium along one wall. The menu leans towards seafood, beef and game, ranging
from Thai fishcakes to beef Madagascar (with brandy and cracked pepper sauce).
