Electron micrographs showing the effects of ice crystal growth in a gelatin gel (c = 2%) according to
their depth. MgO crystals used to label the surface are seen on the top image (thick arrow) and some
calibrated latex spheres (0.09 μm) included in the gel (thin arrow) on the other pictures. The
network appears more and more disorganized by the growth of ice crystals. Only images
corresponding to the superficial areas, around 5 μm from the surface, are interpreted as being the
