While it's good to brew it with a bit of air space and stir/shake it daily during the first
three weeks of brewing, it's best to store it without any oxygen after that if you want to
keep it stored for more than a month. The odds are, if you're brewing it for long-term stor-
age, you're probably brewing several bottles at once. When the brewing is complete after
two to five weeks, one of the bottles can be used to top off the rest so there's no air space,
and then the remainder in that bottle can be used first.
