In-Depth Information
Not all Princi branches are created equal. This one is blessed with the same beauti-
ful Claudio Silvestrin design as its Via Speronari sister, and is open similarly long
hours, giving you lots of opportunities to sample their artisanal range of pastries,
Stracchino-filled focaccia and fruit-filled tarts.

Local Life
Raw Like Sushi
Italians love their
crudo
(raw seafood) almost as much as the Japanese.
Crudo
's ap-
peal draws on the same taste and texture elements as sushi - a deceptively simple
balance of fat, salt and acid - but uses olive oil, vinegar or citrus, sea salt and pepper
instead of soy, pickle and wasabi. The Milanese can't get enough, whether it's Italian-
style, trad Japanese or a fusion of the two, and strangely often refer to all forms of
crudo
as 'sushi'. For fabulously fresh and simple fish, try Da Claudio (

, do
smart sushi and sashimi at Sushi Koboo (

Japanese fusion twist head to Zero (

Bulgari Hotel
HOTEL BAR
Whether it's inside beneath the giant botanical sculptures at the earth-toned bar
or outside on the terrace overlooking the brilliantly green garden, the
aperitivo
scene here is an intense slice of Milan life. The second-cheapest wine on the list
may weigh in at €20, but it's cheap for the theatre, darling.
