Select from the various Bleeds options:

Use Document Bleed Settings.
Select to use bleed settings defined in the
New Document dialog box.
•
Top, Left, Bottom, and Right.
Enter values to define the bleed area.
Your commercial printer can advise you on bleed settings based on your print
job.
