In the Appearance panel, click the Fill attribute row to select it.
If you select an attribute row before adding a new stroke or new fill, the new stroke or
fill row will be added directly above the selected row.

Click the Add New Fill button ( ) at the bottom of the Appearance panel. A new fill is
added above the existing fill in the Appearance panel and is selected.
Tip
You can drag the bottom edge of the Appearance panel down to make it
taller, like you see in the figure.

With the new fill attribute row selected, click the Fill color box and select the
background gradient swatch. This new fill will cover the existing orange/yellow
gradient fill. Press the Escape key to hide the swatches.
Tip
Depending on which attribute row is selected in the Attributes panel, the
options in panels, like the Control panel, Gradient panel, and others, will
affect the attribute selected.
