WISE WORDS: Large lobsters taste great, but when
they get to weigh over three pounds, the tail meat can
sometimes be tough. For maximum dining pleasure,
order two smaller ones instead!
There is no discreet way to eat a boiled lobster. The best place to dig in is
at an informal establishment or at an outdoor or pier-side lobster shack
where everything comes on a tray with a paper plate and plenty of nap-
kins.
The Green Stuff
You might ask, what's that “green stuff ” in a boiled lobster? That
is tomale, the cooked internal parts of the lobster. Many people
simply wipe it out of the shell, although some find it a delicacy
and spread it on crackers or bread.
Transporting Lobsters
While lobsters are best when eaten fresh, they travel well. Most fish mar-
kets and wharfs can pack lobsters in coolers on ice or cold packs with ei-
ther newspapers or seaweed for the ride home. They will keep for more
than a day.
At Christmas time, major lobster suppliers often fill cargo planes at Ban-
gor International Airport with tens of thousands of lobsters headed for
markets in England and France.
Climate
Visitors to Maine frequently inquire about the climate. Many people
conjure in their minds images of people wearing fur coats all year.
Maine, in fact, sports many different climate zones. Within these zones
weather can vary greatly even over distances of a few miles, making the
Mark Twain quote of, “If you don't like the weather in New England wait
a minute - it'll change,” extremely apropos.
