DRESS CODE: Residents dress up for dinner in the
city or at a fine hotel, but slacks and a collared shirt
for men and a casual sun dress, skirt or slacks for
women is all that's required in most places. Bring a
light sweater if you get cold easily, since indoor res-
taurants turn the air-conditioning down low and
night air is cool if you dine outdoors near the water.
Make dinner reservations, especially during high season, especially if you
really want to eat at a specific restaurant. Most restaurants accept credit
cards and US dollars (those that don't are indicated below), as well as
Netherlands Antilles guilders. Your bill will include a 5% government tax,
and a 10-15% service charge is often added. Service charge fees are usually
split among the staff, so give a small tip directly to your server if you think
it's deserved.

or tip. No tax is charged on meals. Starred restaurants are
the author's favorites, because of exceptional cuisine, set-

Waterfort Terrace
One of the most outstanding structures on Willemstad's UNESCO World
Heritage List is the Waterfort Arches. The 17th-century barrel-vaulted
stone arches are a quarter-mile long and 30 feet tall - built to store muni-
tions, food, and medical supplies for the military stationed at Fort Amster-
dam. The thick walls and fortified roof protected Allied forces, who were
here during World War II to protect the island's oil refinery from Nazi sub-
marine attacks.
Today, the graceful old arches have been restored with modern facilities to
house several restaurants, bars, and shops. The original flagstone walk-
