F orget your opinion of hotel meals. Most of the restaurants

attached to Bonaire's resorts are headed up by talented
chefs who prepare a variety of international cuisines, includ-
ing Indonesian, Asian, Dutch, and good-ol'-American-style
burgers. Independent restaurants compete for their share of
customers by offering identical quality, a big splash of originality, and of-
ten some type of live entertainment.
If you want local fare, Antillean meals feature fresh-from-the-sea fish
served with rice, beans, plantain (similar to cooked banana), and funchi (a
cornmeal mush that appears on plates like a scoop of grainy yellow ice
cream, but tastes much better than it looks). A small bowl or jar of pika
sauce usually sits on each table and is used to flavor vegetables and meats.
This local hot sauce is often homemade and varies in strength, so add it
cautiously.
Many of the most popular restaurants are located right on the water, with
fabulous views, especially during sunset happy hours, and after dark,
when lights come on across the island. Plan to eat early. You'll be hungry
anyway after a full day of diving or sightseeing, and most kitchens accept
their last order around 10 pm.
During high season, make a reservation if you want to guarantee a table at
