INTO THE HUNGARIAN KITCHEN
Budapest's cookery courses are not just about how much paprika to add to your halászlé ,
and when is a goulash not a gulyás . It is also a primer in Hungarian culture. Courses often
begin with a visit to a market to give an insight into the main pillars of the Hungarian kit-
chen - their love of pickling everything and how to use every inch of a pig - before the
cooking proper begins followed by a sit-down meal to enjoy it. You will also learn what
wines go with what - and that Hungarian reds are often best served chilled. One of the best
courses is Chef Parade ( 12106042 chefparade.hu ) ,which has well-equipped kitchens
and an informal, fun attitude.

small and smoky burger bar that has a big local following, lying in a quiet street running
down from Széna tér. All the ingredients are carefully sourced - these are burgers made with
care. Also serves vegetarian burgers, three different soups, sandwiches and home-made lem-
onade. Mon-Sat 11.30am-8pm.

charming little bar serving salads and cold dishes, but you can put together your own plate-
ful from a range of hot dishes in the Daily Deal (990Ft). The bar is famed for its tiramisu
(650Ft). Mon-Fri10am-10pm, Sat 10am-4pm.

joint at the Buda end of Margit híd, where you squeeze past the locals to get to your table.
Ham and eggs (900Ft) and baguettes from 1300Ft, and the coffee is excellent. Weather per-
mitting, you can sit at the long table outside. Mon-Fri 7.30am-7.30pm, Sat 7.30am-3.30pm.

taurants in the Vár, the 21 has an elegant and modern feel (and a wonderful terrace) while
the food is fresh, contemporary Hungarian fare superbly cooked and beautifully presented.

ising of locations, at the junction of several busy roads, the “Golden Deer” is, nevertheless, a
fine restaurant, rustling up superb flavours like duck breast with orange carrot and pak choi.
