Compared to yesteryear,

are much better catered for, though exclusively

restaurants are still thin on the ground in Budapest.
Govinda

food, two branches of the

Bar chain and the vegan
Ganga
are some of the best
options. The new Thai and Vietnamese restaurants have brought a welcome breadth to a
quite limited palette, alongside the Middle Eastern cuisine found in
Al-Amir
and
Amman
.
Elsewhere, there's a growing understanding of the concept - you're less likely to get told
that noodles with bacon is okay because bacon is not real meat. Many restaurants now in-
clude one or two vegetarian options on the menu - most popularly
sült zöldségek
(roas-
ted vegetables). Still, in more traditional places your choice might restricted to a diet of
vegetables and cheese fried in breadcrumbs known as
rántott gomba
(with mushrooms),
rántott karfiol
(cauliflower), or
rántott sajt
(cheese).
Gomba paprikás
(mushroom paprika
stew) is also fine, though check if it has been cooked in oil rather than in lard. Alternatively
there are eggs - fried (
tükörtojás
), soft-boiled (
lágy tojás
) or scrambled (
tojásrántotta
) - or
salads, though Hungary has traditionally been weak in this department, despite the excel-
lent produce you see in the markets.
