BY PATRICIA WELLS, COOKBOOK AUTHOR & COOKING TEACHER
1 VAISON-LA-ROMAINE
The Tuesday market in Vaison-la-Romaine might be 'my' market but it is truly
one of Provence's greats. It has the freshest local produce around, especially as-
paragus, strawberries, melons and heirloom tomatoes. Go to Lou Canesteou for
cheese and Peyrerol for chocolate.
2 ST-RÉMY DE PROVENCE
My other favourite is St-Rémy on Wednesday: I love the town, the ambience.
Perhaps it is more a market to buy trinkets than food, but whatever you are there
for, you just always feel as though you are in the right place at the right time.

3 UZÈS
The third in my top three is also on Wednesday, in Uzès, west of Nîmes. The or-
ganic market on place aux Herbes, one of the prettiest little squares in all of
France, is stunning - great goat's cheeses, confitures (jams) from the nuns and
wonderful local olives and olive oil.
4 RICHERENCHES
My favourite speciality market is on Saturday in Richerenches, November
through February. It is a fresh black truffle market - VERY mysterious and you
can't figure out what is going on, with lots of people selling pillow cases bulging
