Vegetarians & Vegans
While vegetarians can have a hard time in Spain, most major cities have vegetarian
restaurants. Otherwise, salads are a Spanish staple and, in many restaurants, are a
meal in themselves. You'll also come across the odd vegetarian paella, as well as
verduras a la plancha (grilled vegetables), garbanzos con espinacas (chickpeas
and spinach) and numerous potato-based dishes. Tascas usually offer more veget-
arian choices than do sit-down restaurants. Vegans will need to ask if dishes con-
tain huevos (eggs) or productos lácteos (dairy). Restaurants offering a good veg se-
lection are easy to find throughout this topic - they're marked with a
