Spanish cuisine is all the rage around the world - and no wonder.
Uniquely Spanish ways of eating (such as tapas), the enduring appeal of
Spanish staples (including jamón, paella and olive oil) and the astonish-
ing regional varieties partly explain the phenomenon. But sheer culinary
excellence wedded to the new wave of innovation that has taken hold in
