The most emblematic pintxo in San Sebastian is the Gilda. Its base always con-
sists of pickled guindilla peppers (a mild green chilli), anchovies and olives and is
traditionally served piled on a plate and doused in extra-virgin olive oil. But this
being San Sebastián, some bars do creative variations on the theme.
5 TXAKOLI DE GETARIA
The perfect (and most traditional) accompaniment to many pintxos in San Se-
bastián is a glass of txacoli, the tart local white wine, which is often poured into
your glass from a great height. And not just any txacoli: it really should be
Txakoli de Getaria, which is produced west of San Sebastián. It goes especially
well with a shrimp brochette.
