As far back as 1690 a plantation now named Rawlins began
producing sugar. Nearly 300 years later, the greathouse,
burned in an early fire, was reconstructed and opened as an
inn. Today Rawlins is in the hands of Cordon Bleu-trained chef
Claire Rawson and her husband, Paul.
Along with dining, the chief activity around here is pure relax-
ation. With no phones or televisions in the 10 guest rooms, the
emphasis is on leisure.
T The most romantic of the hideaway rooms is the hon-
eymoon suite, housed in a 300-year-old sugar mill.
Guests climb a winding stair from the downstairs liv-
ing room to the upstairs bedroom perch, its walls made
of volcanic stone.
